Also while washing my dads car I had a chance to look round the mk3 properly. You can tell the difference in quality/sound proofing compared to the mk2. More rubber around the doors for a start off. Also doors fell heavier and more reinforced.

Impressed with it.

To be fair the mk2 cupra looks very similar to the mk2 FR. Only difference are wheels, brakes and front bumper slightly.

It's only the mk2 Cupra R that's looks alot different.

Had the new leon as a courtesy car. Sounds solid but the road noise was just as bad. Really liked the stereo though

Well I had my car remapped (PD 170). It didn't go on the RR, but I'm not as "wowed" as I thought I would be. All I really notice is that it's more responsive on lower revs and seems to kick in a bit earlier. Torque wise I don't notice anything different, and when I get just above 3K revs in 3rd/4th the car seems to lose power for a second, then comes back on which is really annoying me (might be DPF related?)... not sure what to do.

Might be worth getting a RR done. Because awesome keep the DPF in I imagine it's not pushed as far as it could be to try and aboid DPF related issues

Indeed. And then take it for a test drive hooked up to vagcom. Monitor values for rpm x requested boost x actual boost wrt the drop in 3rd/4th. It actually happens in all gears but you notice it most then.
You'll probably see requested boost peak and then actual boost drop to a flat level for a while.
I had the same issue. Needs a remap to fix.

How easy/difficult is it to remove the grey panel the rear plate is on? Thinking of getting it off and glass black wrapping it. Anyone else done it?
