They do need to be as they are designed for 312mm discs. They are 4 pot fixed calipers, not single pot sliding calipers like the rears or the fronts on other Ibizas. That's why I was surprised you use pads designed for 288mm discs, but suppose it's not that much difference in size. But they wont bite as well as if you got the bigger calipers.

The best thing to do is to change the calliper too but you dont NEED to. And yes the fixed 4 pots are better than the floating callipers like we have on our "common" Ibiza's.
The common mod is just the change the carriers and discs though.

I dont think mine are zink coated so I have been thinking of spraying them with some silver hammerite to stop them oxidizing.

Did you get the DS2500s, Damo? Mine are rubbing in this cold weather, I think the calipers must contract slightly in the cold or something..think I can file them down a little so they fit better tho.
