Over cooling?

Normally when my car ( leon Cupra) is warmed up it runs at about 90degrees ( middle of temp guage) However with the colder nights and days i have noticed that this often drops to about 75 - 80 when the outside temp drops below 8c. This even happens at motorway speeds and i drive about 25 miles to work mostly on the motor way so the car is def warmed up! However when i get into slower traffic the temp often goes up alittle.
Is this right? Or is it over cooling, possibly a stuck thermostat?
Just curious!

I'm 99% sure the engine temp will not actually be this temp, I've been driving for 14 years and all the cars I've driven when warmed up run at 90 degrees C approx
Therefore this must be some sensor problems

If it's fluctuating it's the sender, change it for a green one.
If it never gets hot especially in the winter but does in the summer its the thermostat.

had the coolant sensor changed a few weeks back as it was faulty. Mine does sometimes hit 90c but only on warmish days. anything below 10 -11c and it drops. This morning when the tem was only 2c outside it was as low as75c on the dial and i had been on the motor way for nearly an hour! Think i will extract the thermostat and test it.
