Not totally true. You have to have convenience closing check marked for that on the infotainment. You can turn that off. A long press or hold is achieved by that.Holding your hand on the surface of the closing sensor will also close the windows and the roof.

Many of the issues of dropped windows originate from male tight pants so they sit on the sofa at home and wonder why when they go out to the car the windows are down. Solution to that is to toggle convenience closing to off. Well known Ateca issue. Should find that in the Leon 4 manual, see
"In the infotainment system different settings
can be adjusted using the function button
> Exterior > Windows> Convenience open-
ing."
The sunroof / panoramic roof did also work like that but after a US accident with a trapped head (think someone got killed), VAG disabled that function although can be turned back on with VCDS with the risks. I doubt that if you can get a head in the roof of a Leon 4, VAG will allow central closing of the roof from the outside. Unless they have decided they can mitigate from legal action by a weaker motor.
The function is popular in the heat of Europe where you can open up and closing everything as you approach or leave the cat.
