This has been on my to do for a while, but I'm lazy and I left it too long and the weather has obviously turned. Today, the weather was crying out for it. If I didn't get round to this today, it was going to be easter or something!
Anyway, immediately after collecting the car, I installed a Pioneer SPH-DA120 for her. This is documented here --> http://www.seatcupra.net/forums/showpost.php?p=4676521&postcount=8, during the installation, I knew a camera was on the cards, as I did exactly the same in my car. Having learnt from the install in my car, I knew to fill all the ports in the Pioneer whilst installing, so that I didn't have to remove the unit down the line to add extra cables etc.
So, this is how I went about installing the reverse camera to her MK5/6J. First of all, this is the camera I used, a cheap, generic China special... Set me back about £10 from AliExpress, granted the exchange rate might not be in your favour right now, but still, it's not going to break the bank - and it does it's job!
I removed the rear passenger light, in order to identify the 12v and Ground. I understand this is fairly standard, but dont hold me to it. Do your own checks. Anyway, in my case, Green/Blue was 12v+ and Brown was GND.
Having identified the 12v+ and GND, I then set about running the camera cable. As mentioned, I'd already hooked this up to the headunit, I'd just left the cable coiled up out of sight in the passenger footwell, so it was just a case of getting it to the rear end. I ran the cable under the plastic trim, front to back. This is roughly highlighted below.

Removing these 2 plastic screws with a flat headed driver makes it a lot easier to get in behind and go up and over the rear wheel arch.
With the carpet clear and the light removed you have access to everything you need. It's worth tapping into the 12v+ and GND from the reverse light wiring at this stage, so you only have to run the wiring one time! With the additional wires you've hooked up for power, tape these to the Video cable and feed them through the grommet.
I then unscrewed the existing plate light, and popped out the actual holder. It was only at this stage did I check the Camera would fit, probably should have done this first, but hey ho, it DID fit, so all was well. With the original holder and bulb out of the way, I fed a feeder cable through.
I removed the 3 T20 screws on the black fender under the exhaust and dropped it down. I was able to reach in and pull the feeder cable I dropped through the bulb holder. Whilst not visible in the picture, the video and taped up power cable was also within reach, so I pulled this down through the gap in the fender.
I then taped the video and power to the feeder cable, and simply pulled it back (away from the car) from the bit left dangling out of the bulb holder.
With the video cable, power (12v+ and GND) pulled through the bulb holder, there was plenty of length giving me loads of room to do the soldering of wires etc with plenty of comfort. It was simply a case of connecting the 12v+ you ran from the reverse light, to the female DC barrel supplied with the camera and also the red tail cable that runs down from the Headunit (this triggers the screen to switch to camera when you put the car in reverse). And wire the GND to the black wire from the DC barrel.

The camera comes with an SMD LED and two more wires to connect up. I joined the Red of the LED to the Grey wire from the original bulb holder (+) and the black of the LED to the Brown (GND). It was then a case of putting everything back in its rightful place.
...and testing it out.
