a higher 'grade' bolt will take much more load (stretch) before perminantly stretching.
I have heard that ARP can provide bolts for this job.
and Nordlock washers get a thumbs up from me, recently got some of these from work and used them on a friends car when fitting a new manifold -> turbo gasket, perfect for the application

length depends on manifold..
std ones are shorter than those on a jbs or ina/034 manifold for example
