Wheel fitment help! 18x8 or 18x9!?!? Porsche wheels!!!!

Hey everyone so I'm in a bit of a pickle at the moment. I have a special set of Porsche 911 wheels that I think will look... how you Brits say... "smart" on my mk1 Cupra. Only problem is I cant decide between 8 inch wide or 9 inch wide with it. I should mention I don't like running stretched tires. Here are the specs I'm dealing with please give your opinions! Thanks in advance!!!!

18x8 Et50 (20mm spacers make it Et30)
fitting 235/40/18 tires all the way around.

Or

18x9 Et52 (20mm spacers make it Et32)
Fitting 245/40/18 or 255/35/18 tires

I'm not sure what the widest tire profile you can fit under the leon fenders.

I'm using the car as a daily and track car

I'm coming from an sti where I was spoiled and had 265 wide tires on 10 rims all 4 corners

I obviously want the wider tire for the added performance and I don't want any kind of staggered setup and my car is 4x4 so I would really need to rotate the tires often to keep the wear the same.

Do you guys think the 9" wide would fit without stretching the tire? Also can we do fender rolling to our cars? I did on my old m5 and that was the bees knees with 285 rear tires.
