Hello, I have had a problem with my Seat Leon FR since I first got it. Unfortunately, it constantly shows that the oil pressure is incorrect, namely it shows the message "Attention! Oil pressure, turn off the engine!" Of course, this problem was immediately investigated by me, or rather by the people I commissioned to do it. So far, 4 separate oil pressure sensors have been replaced, and 2 separate oil pressure regulators. In addition, a new original map has been uploaded, corrected, and with an increased oil pressure value. The system was also reset, but unfortunately it still did not help. I will also add, importantly, that the message about the oil pressure may appear and then suddenly disappear, as if the system only detected that it was a short error. However, if the message itself does appear, it only occurs when a) the engine is warmed up and b) only and exclusively at low speeds and when standing at e.g. a red light. I was able to drive this car on 500 km routes and absolutely nothing broke down in this matter, in the city, where we often stand and often do not exceed 30 km/h, it can appear really every now and then.
My car is:

Okay, just registered as I has this problem AFTER a service by a new garage after moving to a new area. Standing at lights, oil warm, oil pressure light came on. Turned off, back on, off, drive back to garage. "maybe just a glitch" they said....errr I doubt it. went away, did it again that night when oil warm on tickover. They were saying it must be an oil pressure switch failure. Err, too much of a coincidence!

Went to another vw specialist and they went through what they did and rang up vw techs. Found that on the oil filter housing/probe thingy, there are 3 rubber seals. The bottom one was missing, causing not enough oil pressure al low revs and warm oil. Must have only just been low enough to trigger it on occasions. VW no longer made that housing, so was replaced with the newer filter housing with ALL SEALS in place - been 8000 miles and been good as gold.

Not saying this is your case, but seems a good thing to look at.
