I can confirm mine also lags, but there's an interesting difference:
After I reached the authorized Cupra service center, they told me they were waiting for an update regarding several new issues with the facelifted Cupra Formentor. Such as '' https://www.youtube.com/shorts/frLLY8jpsiE '' a problem with the driver-side power window mechanism in my car. Also you can check the picture i uploaded, there is another problem about home coming system, before the welcome animations finish, if you start the car, the rear lights show an error.I can confirm mine also lags, but there's an interesting difference:
- the image might be 1-2 seconds delayed (with respect to the car movement) ONLY immediately after the car is started;
- there's never a delayed image at the end of the trip (more minutes or hours after the car was started)
The above make me belive it's somehow related to the system still "preparing" stuff in the background, after being wakened...

p.p.s. I never noticed this kind of behavior in the first 5-7 months; I never did a factory reset of the infotainment, but I occasionally force-reboot the system, trying to improve its responsiveness.
They never seem to learn... there's really a wide spectrum of errors on most new models. Even on the facelift version - which should actually benefit from fixing all the errors and problems of the pre-facelift.
They might think that if they produce a completely flawless model, no one would buy the next one.

I had 2021 Facelift Seat Ateca before Formentor, i experienced the same problem with the mirrorsI unlocked my '23 Formentor the other day, got in to drive and the wing mirrors had not folded out. Locked and unlocked and they unfolded , who knows why these things happen. Never happened before and never since!
It's not just Cupras though, most cars these days have these technical quirk's.
