I get it, I've got some long ish blades which may test the arm on this sort of thing...It all depends on how quick or slow you stroke across the blade edge (ooo er!!!)
You can use multiple strokes of the whole whetstone along the blade edge, depending on the length of knife.
I’ve marked the vertical tube with 17, 20 & 30 degrees so it’s easy to move to different angles. I use 17 degrees for kitchen knives as this seem to be the most used, although 20 degrees is another common.

I pre soaked the stones in the plastic tub I now keep them in (container from Saturdays fried rice dish), I kept dripping water on them each time I swapped knife over.

Thanks very much for your help. I'll see what I can get hold of.To start with I was just gliding the 150 stone so about 1 - 2 but as I got used to it I would say I now use about 5 for each stone.
