My 1.4 8V Ibiza ran on 10W-30 Castrol Magnatec for the last 2 years.

I just changed the oil yesterday afternoon and had about half a bottle of 5W-30 Castrol Magnatec and half a bottle of 15W-40 Castrol Magnatec so I mixed them.

I came to start it this (cold) morning and it struggled a little, although was fine once warmed up.

Could it be a problem with mixing the oil viscosities (even though I used same brand) or is it likely that it's because it was cold this morning and I didn't turn over the engine much after replacing the oil and filters since yesterday so it just took time to get into the engine parts?

Just a little concerned

You should probably be ok mate, if there both synthetic (which they are). They will both dissolve in each other i would imagine giving you an oil with intermediate properties of both.

As for mixing Synthetic with Mineral i wouldn't recomend it, but if worst came to worst you should be ok in a reasonably modern car with good seals.

Keep an eye on it and if in anything else develops, post up.
