The electronics decide when to chill the air and how much to chill it to keep the cabin at the temp you have set.

The same with the heat.

As said "ECON" will attempt to maintain the temp you have diled in without using the refrigeration compressor, This may save an MPG or 2.

Ill let you into a little secret, the A/C is always on to some degree, there is no coupling on the compressor, its runs constantly.

You need an a/c clean. Quite a few products that so it, the best ones you let off in the car and it cleans the evaporator.

slightly off topic, if it stinks, what should i do?

Intially try putting it on max heat with the aircon off for a few mins often this will dry and kill the bacteria causing the smell. If this does not work then try and aircon freshner/clean.

Climate Control is Aircon but with the ability to automatically control the temperature to a set level inside the car.

Slightly off topic, but is it easy enough to get rid of the gas from the a/c system as I am thinking about ditching the a/c core out of the way of the intercooler.

A) you do have aircon, but its all wrapped up in the Climatronic system which, as mentioned, is climate controlled e.g. will track to a specific temperature.

B) ECON Mode = Air Conditioning Compressor Off, i.e. aircon off. However as techie mentions, there is no physical decoupling of the air conditioning compressor from the engine, so presumably some component of the compressor is always spinning. Quite how it stops producing cold air, I don't know, but one presumes that it is some other component which can be controlled electronically (perhaps a pump) which is turned off so that the air con gas stops circulating.

Unless you want to lose the refrigerant I think you'll need specialist equipment. A/C service/fridge companies drain the refrigerant back into a tank if they need to work on the system. There are two valves on the A/C pipework under the bonnet - they hook into these and pump the gas out - not too sure how - on fridge vans I think they just run the fridge system and let the pump push it out - I would guess it's the same on A/C

And to that point, you need to be qualified to muck about with the coolant you'd need to have someone remove it for you before you did anything!
