Don't get me wrong over the years I've done a few on the side and you can get away with a vacuum time of 10 mins but it's best to do a longer period to remove all moisture etc and you then guarantee a excellent vacuum to pull the new gas and lubricant in.
All I was saying is if your paying for it make sure it's done properly.
It sounds like he switches off the vacuum pump as soon as it reaches a full vacuum; to do the job properly the pump should be kept running for at least 15-20mins after it's reached an indicated full vacuum for the reasons given by Kev.
I've re-gassed several hundred cars and it takes me an average of 1hr to do the job!
