Hi there

Ibiza Cupra 1.8TSI.

Coolant showing at level in photo. Taken after a brief 10 min drive.

Second photo is coolant I bought.

Am I okay to just top it up with the coolant I bought?

Or should I be doing a full drain and diluting?

many thanks

Use G13 coolant. It is backwards compatible in all vw engines.
But why, G13 suffers from early loss of some of its protection in certain engines and that is why the Silicate pouches were added into the coolant reservoir in the first place, then VW Group moved onto G12evo and from then onwards, G13 was not sold from VW Group parts departments.

In other words, why make life harder for yourself when G12evo is available from VW Group dealerships parts department and there are some aftermarket sources/suppliers of the same as G12evo.

You are right. G12 Evo is the latest coolant version from VW. Used in newer cars after MY19.
You could use G12evo. But G13 (which is much cheaper here) will also do the job and its probably the one the car had from the factory.
