i don't know if this matters but i notice the one that was fitted had a smaller MDF screen? would this make a difference ...?

The smaller MDF screen is on the 07 cupra I beleive. The black part of the dash (the bit with the round holes) is the same on all the models, I asked a friend of mine to check for me.
This is going to amuse you all. But I've had SUCCESS with the rings I bought. With a lot of help from Greg @ the_tuning_Shop (to his credit) via his VIDEO INSTRUCTIONS, I've got them fitted!! 
Here is how I did it.
1. Bend disks into an oval using my hands – same as in the video.
2. Bend the disks across my knee to put a curve into them across their length as roughly in the middle as I could.
3. For the outer rings, start furthest from the centre of the dashboard for each on. I.e., closest to the gear stick for the left one, closest to the window for the right one.
4. Work them in with both hands going in opposite direction until you meet ar the other side, and with a LOT of force, bend the final part in. However, Because there was little leverage or anything to push on I had the put a pair of leather gloves on the protect my thumbs, and push on them harder until they went home.
The middle one was difficult.
1. Again I bent it to an oval.
2. Again I bent it across my knee to put a curve in the middle, but because of its size it was a lot lot LOT harder to do. I had to wear gloves for this as they are razor sharp (as I discovered).
3. After that, same process as above, the final shove still required to push them home

Its weird as I ordered the exact same set of fleabay on monday, I figured they would be easier to fit as all my dash is out of the car at the moment. Wainting for the final layer of lacquer to dry and then will have a go fitting them tomorrow, cheers for the link to the video, feel a bit more confident now!
I must admit I was a bit dissapointed with the air vent ones, I thought they covered the whole of the lip, my mistake for not looking closely enough I guess...

Here are the wind deflectors. I got them from ebay. I got front and rear as the rears worked out £3 more than just buying the fronts. I've only fitted the fronts however as I don't like the fitting method for the rears. It involved shoving 2 metal spring clips for each one up the bit at the top where the glass goes. I thought it looked a bit risky and I'd never get them out again.
I got some of these from eBay today. I really should have read this thread before getting them. Can't fit them, my thumbs are sore, my dial surrounds are slightly scuffed and I'm fed up. Will try asking the guy for a refund, as it's another modifying fail from me. 
Any tips? Just force them in until they fit? I'll maybe have one more go before I give up. Fingers are sore after the first attempt mind you and I still have a sore one after I shut it in the car door 8 weeks ago.

Perseverance Iain,gradually work them into shape but wear gloves to avoid lacerating your fingers
I've just spent 10 mins installing a set of these trims for the dials and vents with no real problems.
The set I received from the seller were pre-shaped to fit, they still needed some slight tweeking to fit evenly all round, but I'm very happy with the result, and when the dash lights are on, you get a reflection on the inner edge of the trims which seems to give the dials a greater sense of depth.
They're not cheap at about £50 delivered for the full set, dials and side vents, but it does give the dash a bit more presence.
