2 piece disc's consist of a bell and rotor setup, this means you'll be able to change just the rotors when needed but more importantly will run cooler than std disc's, however they are expensive over a std uprated disc. Nice motor by the way will try and remember to but redline when it's out and have a read up,
Not 100% true TBH.
Initially 2 piece discs are more expensive to buy than 1 piece but after the initial out lay the replacement costs are similar.
With your set up I would at least be running 2 piece.
Also 2 piece discs are 3Kgs lighter than OEM 1 piece, this giving less rotational mass and less unsprung weight.

OK. What benefits are there (without wanting to start a massive discussion on the topic)

Less rotational mass is easier to accelerate and decelerate, and less unspring weight allows more effective controlling of the suspension due to less initial mass trying to be damped, and therefore inproves the handling capabilities.

OK. I was thinking over to my bikes, where the gyroscopic forces that stabilise the bike at speed are reduced as you lower unsprung rotational mass and make it easier to turn in, but that's probably more to do with leaning the bike over than actually changing direction?

beware of boxter-s 993 rears... wrong size pistons for your master cylinder.
they will feel terrible, hard, non-servo assisted type feel.. avoid

AP's good, Brembo's good

Lighter disks "feel" lighter and more responsive when turning the steering, as you have less flywheel effect from the lighter spinning mass.. just the same as lightweight wheels vs often very heavy replica wheels.. ruins the feel and turn in of the car..

thats just two of the things that was impossible to do in the leon due to ridicilous wheelspin.hopefully now the racelogic traction control is getting fitted i should get way better results
