Do you mean the official Seat double-din version? If so then yes, it can be done, and it's only worth it if you think the price is reasonable. You're talking £90 I think for the double-din dash which will relocate the Climatronic down to the ash tray, and the ash tray should be moved to the centre console below (another part to pay for). The Seat Sat-Nav isn't cheap either. There are other double-din alternatives available however. Take a look at Pioneer and Kenwood's websites for examples

Personally I'd love to do it to mine but the HUs I'm looking at cost too much and I'd feel that I'm selling myself short to get a cheaper one so I'm holding off for now...
I don't know whether this might influence your decision, but I'm not a fan of the standard sat nav. Mine is horribly out of date, and it's around £100 to get an updated CD map. Add the fact that it's not touch screen, and it takes a long time to put an address in, I just don't think it's worth having. I have a bog standard windscreen attached sat nav for when I want to go somewhere.

I totally agree about blind spots, as a motorbike rider I have seen some ridiculously placed sat navs that must be blocking the drivers view! I sit mine as low as possible so its sitting on the dash, the only thing it's obscuring is the bonnet. It's still a distraction though, so I only use it when my map doesn't show enough detail.
You'll find the standalone units are far better than any dash mounted unit, which doesn't really help you. Perhaps you could come up with some ingenious way of fitting a standalone unit into the dash? It would be alot cheaper, and certainly one of a kind.

SNAP! Is it me or is it only bikers who seem to realise the hazard that they can pose? Then again, looking at most people who have them set up badly they normally fit in to one or two categories, so it's not everyone
my 2p is dont bother with any double dinn unit and use a windscreen mount one like the garmins or tomtoms. These are much cheaper, and have bonuses like you can take it out to update via usb from your pc, and they also show things like speed cameras.

What worries me is that I've seen people drive away from Halfords, after having them 'professionally fitted', and they're in the middle of the windscreen just under the rear view mirror. And they should know better!

Ha ha, no, they normally have the factory fitted options... I was thinking more like women drivers and young lads. Not saying everyone in those categories does it, but 9/10 times, when you see sat-nav in the middle of the windscreen, it's one of those twoMmm, one or two categories. Hi, sometimes ago I took a chance and I install SEAT Dynamic Navigation System with color display in my car. It tooks me about 6 hours and cost around 500 pounds. Now I'm using this display mostly as a DVD player for my daughter. And for real navigation I'm using a MIO palmtop with the latest TomTom maps. OEM navi looks nice but if I had to be honest it's usless.
