Full Brake Rebuild

Currently rebuilding the brakes and I'm after a bit of advice.
I have bought new front and rear discs ( drilled and grooved )
Stripped calipers, resealed, shot blasted and painted with red foiltec paint system.
New pads front and rear.
Goodridge hose kit.
I Have removed the backing plates, the rear has been shot blasted and painted, so is in good condition. The small front ones however are not so good, so I was thinking of leaving them off.
Are they of much benefit or is fine to leave them off?
Secondly, I bought a rubber boot kit for one of the calipers slide pins as they were split.
This comes with a pouch of grease, does anyone know what this is as there isn't enough to do all four calipers. I was just going to use copper slip, or is it some kind of high temperature grease?

You cannit go wrong wif Copaslip mate!, thats all I ever use on my brakes never had any problems.
