What engine is it? if its a 1.4 id say clean the throttle body out then get a throttle body alignment/reset with vagcom theres loads of guides on how to do a TBA on the net using vagcom i had to do it to my old polo its dead easy if not i had it done before that at a garage for £30.

mine's being doing that for a while, and i've also heard of others. If you do a search you'll find all sort of explanations.

At first I did all the standard suggestions (throttle body clean/alignment, change the oil and asked around a bit). Mine only does the cutting out if i've left it for a couple of days without use.

Got my hands on a ebay cable last week, with the free version of vagcom. For the life of me I havent been able to work it, jsust says something about interface not recognised. Don't want to fork out the 60 they charge to vagcom'it up around here.

I'm guessing it's most likely to be one of fthe sensors, and it would be an easy fix as well, once you know wtf is actually going wrong

These cars are designed to run on reserc d/v if its a fully atmos then that will cause problems itself...if its a dual port like the split-r then its proberly not set up correct. Id look at changing it for the correct d/v fitment asap.
