The best thing to do is change the white bit the clocks come apart easily, this what i did, they will go straight in but you will need to match the immobiliser with your ecu so need vag-com.
The worst bit is getting the needles off, but if you use two tea spoons on opposite sides and lift the needle off once you've done one is easy.

There was only a very recent thread about this, maybe a few days ago

Yes the instrument cluster fits straight in with no problems but as Phil says you will either need Vag.com or a trip down to the dealers to marry up the immobilser

Obviously if you are just going to swap the coloured fascia over then there is no reprogramming invloved.

Taking the clocks out is very simple indeed.

Pull your steering wheel out and down then lock it into place. The black plastic strip will then pull off (be careful) as it is help on by two metal clips. This will reveal two cross head screws. Undo these and that's all there is holding it in. Pull the trip switch reset stick to pull the clocks out

Just to add, once you do this, you will probably want to disconnect the 2 cables on the rear of the clocks. This will allow you to fully remove them from the dash and get better access. Then just unclip the plastic face and you're in.

Have you thought about custom dials:-
