Dealer told me that the car will be delivered with the standard cloth seats from the factory and the dealer will then be sent the seats from SEAT to exchange at the dealership, the original seats then go back to be covered for someone else.
Thats what i was told 2 weeks ago. I was considering but at £1500 was a little steep. Local company in Chelmsford can do a better job in virtually any colour for around £1000, so may go for that at a later date. Can dig out the details if your interested.
Seem to remember reading that the only part of the seats that is leather are the parts in contact with the body. So seat base and back support. The rest is leatherette or leather effect on the back, sides and edges. Which makes the £1500 look even more excessive.

Sadly the price of the A3 I have been looking at will require too much credit and money per month.. so I am considering this as an upgrade. Going to phone my local dealers tomorrow (which I was going to anyway as I want the black grill and a round gear knob).. will see what the lead time is
Got mine re-trimmed shortly after delivery. Job was done by a Polish trimmer who works out of the Carnoisseur depot in Ballymena, N.Ireland. Four seats, four door cards, arm rest and gear lever gaiter for £800, although his prices are now up around the £1000 mark. Flawless job and all in three days.
