Ibiza cupra after about 7 years of not turning a wheel (and not under cover to my shame!)- cleaned it up today and assessed the damage....
Contacted the dealers and it seems loads (and loads) of parts now obsolete so they couldn’t even order them. Then I remembered it’s now a 20 year old car!
Is it basically just having to check eBay/classifieds for the bits now?

Yes I'm afraid so you'll have to contact your local or national salvage scrap yards, for any good secondhand spares you're after, or like you say Ebay of Gumtree could be a good shout, plus you've got GSF or Euro Car Parts for the most common sort after items like service kit, clutches, brakes.
On Ebay some sellers have new
Ibiza MK2/3 front and rear light units, switches, interior trim item's sometimes.
I myself have a
SEAT Ibiza but is only 4-1/2 years old so most parts for it are still available at the moment, plus I have a 26 year old VW Corrado that I've owned for the last 18 years, most of my parts for this I get from VW Classic Parts or VW Heritage.
I believe the VAG main dealerships only
store parts for roughly 10 to 12 years per model, so after this time if certain parts sell out then they won't replenish their stock levels unfortunately.
My best advice is if anyone is going to keep a car long term, is to stock pile spares as much as possible in your attic / shed / garage or spare room, otherwise you may have difficulty finding the item/s in new condition may years down the line.
I don't think SEAT has a classic car department yet, I know VW have VW Classic Parts in Germany that make and keep parts for the older VWs, plus they have VW Heritage here in the UK.
I think BMW possibly have a classic car department, also I believe Ford have Ford Heritage that club members can get old sort after parts, then you have the MG owners club that can
help with wanted items for their old MGs.
This site called ETKA I use all the time to find my part numbers for my VW Corrado when ordering new or secondhand item's.
Because SEAT is part of the VAG as it's owned by VW, you can also look up your car details on the ETKA Parts site, which like I say is a massive
help when trying to find an item, plus is useful to have the OEM part number to hand when searching on Ebay for example.

Other than that is to make a list of all the parts including their part numbers, and put out a request in a new thread to other fellow MK2/3 members.
