I will be getting my Leon VZ 1.5 Sportstourer (272 hp) 2025 plug-in in a couple of weeks and wonder if it's possible to replace the fake exhaust with the tailpipes in the image above.

Specifications
Long side: 102mm (exhaust tip) + 75mm (Y-pipe) = 177mm + connection pipe 40mm
Short side: 82mm (exhaust tip) + 75mm (Y-pipe) = 157mm + connection pipe 40mm
Width: 190mm
Height: 88.9mm

Your car most probably will have a rear silencer like the one in the illustration below, with twin outputs at only one side, looking down at the ground.
By replacing it with a custom one with single outputs on each side, a specialist can extend those outputs to the tips you'll provide.
Whether the bumper allows an application like this, and how it would needed to be cut, should be checked of course with the specialist.

I have got a similar rear silencer replacement done, with my new Cupra Ateca two months ago.
Luckily the bumper had a section that was an exact match for the twin tips in width and the end result was looking almost like factory-installed, as you can see below.
I believe a skilled specialist would find a solution for your needs.

Cheers,
Serdar
