I purchased my Leon Cupra R over a month ago now, and it's a 2003 (210) model. I bought it from a Seat dealer with an extended 1 year's warranty.

I took my car into the Seat garage yesterday, and they've come back with the following faults.

Coolant Sensor - needs replacing.
Throttle Body - needs replacing.
Clutch Master Cylinder - needs replacing.

I'm hoping this is all covered under the extended warranty, but can't be too sure. If not, I'll kick up a fuss, because one month ownership and all this to happen, and no help from Seat would be dreadful customer service.
So far there helpful and always ringing me back. So far so good :)

All of those should be covered. They aren't in any way considered 'consumable' or service parts and they wont fall under any of the major exclusions that some warranty companys put in place, such as turbo's, so you should be fine :)

Don't worry chap - it'll be covered without a doubt.

(Even if it wasn't, after only amonth of ownership the sale of goods act would cover you in law and no garage wants to invite trading standards in to their world!)
