then if someone can help me, i'd like to know FOR SURE if i can upgrade my front brake system with the brembo JUNIOR KIT with disc 323x28 (just like the OEM CUPRA R's one) and keep my 7.5x17 arrasate alloys WITHOUT SPACERS.

Hi,
Amazing interior work!!! Congratulations!!!
I'm form Portugal, and I also have a Limited Edition, it's a great edition ;)

I've installed the Seat Sport AP Racing brakes, 312x25 with the stock 17" LCR rims.
In my case, no spacers needed. But it only have like 2mm of clearance from caliper to rim.
You can zoom in at both photos and check it out.
So I guess you will have some issues with the Brembo's fitting in 17"

With the Brembo calipers, you have to change the front brake hoses, because the connector that plugs to the caliper, is totaly different.
You have to choose ones from the LCR with Brembo brakes.

Stock ends are just like this ones:

Or this after market ones:

You can see the difference for the Brembo:

I was wondering, how did you fit a 2DIN unit in there?
Seat wants more than 300€ only for the interior part of the central console, like this one:
