but those pedals covers on the site offered by EZ Tufty - are this just clip on after removing stnd black rubber ones? or do they need fixing by glue or clips?

I know these are a direct fit on a cupra, can't see other models being different.

However i've had to order a left hand drive accelerator pedal, the Right Hand ones are too small for my ibiza.

Try Ebay, I bought some polo gti ones which are very, very similar for about a fiver second hand, and let's face it your only going to be treading on them, so there going to get all shabby any way....

I ordered a set of those for my Ibiza but the rubber didn't wear very well at all. The clutch was wrecked within 6 months. Maybe I got a dodgy set (or I drive wrong) but just thought I'd warn you...still for £20+ you can't go far wrong.
