Same happened on my brand new Cupra more than once. It clears itself. My main screeen would also completly die so I carried a 10mm spanner around with me so I could disconnect the battery and that would fix the problem. Not great for a new car but I love it so much I put up with all the Gremlins! On to my second Cupra Formentor now and the same issues.....

Get your 12V battery replaced asap!
Your engine will fail to start next - likely within months from these first symptoms.

If you want peace of mind, purchase a jump starter.

On a sidenote: Disconnecting the battery isn't ideal and you'll still be storing lots of DTCs on multiple modules. Yes, the faults do clear themselves upon driving, but an OBD11 (or similar) is sometimes still needed for the occasional DTCs that don't clear, needing the ignition on, hood open diagnostic mode, and a healthy battery.

These vehicles all suffer from modernity. Connect up to a CTEK charger for long-term storage. Having been through this ordeal myself recently, there is no driving it better to "charge the 12V battery". The battery is in the process of dying and voltage will fall off quickly, so beware.
