So it's more complicated than I thought. It looks like the older (pre-2004) Sport130, FR (and I'm guessing Cupra) models do not have the middle headrest, but lower models in that era do have it. I suppose this is because the rear seat in the higher models is shaped with only two people in mind anyway.
At some point very late in 2004 they introduced the third headrest into the FR as well (and I'm guessing also the Cupra). As Gaz said, it was probably at the same time that the steering wheel audio controls were added (I don't have those either). Perhaps they were forced to do this by new safety regulations?
