Hub Convertors...

If i was to get 5 stub hub convertors could i fit LCR Brakes straight on if i get all the nessacary parts??

You can't fit 5 stud brakes with hub convertors

You need to change your hubs to 5 stud.

no, you could fit a Mk3 golf Vr6 hub into your hub carriers with new bearings, but you'd probably need to faf with the brake carriers to fit the calipers too.

Just get Ibiza R brakes or a GT kit.

Ibiza ones are enough. The leon calipers aren't any better, just look bigger iirc.

Leon ones are bigger by 21mm in diameter. Same size pistons in the calipers, same size pads etc.
Leons have a very flat offset so wheel clearance is more of an issue for spokes to caliper. 305x28 disk is more inset so less caliper clearance for wheel spokes is req'd. (38mm vs 50mm)

£740 gets you a 4x100, 305x28 Disk setup, or you can go to 330x28 size if 2-piece disks, and wheels to clear em (17" minimum)
